Slow Cooker Potato Cauliflower Soup



This Slow Cooker Potato Cauliflower Soup is creamy, comforting, and packed with flavor. It's a perfect meal for a cozy night in or to warm you up on a chilly day. The slow cooker does all the work, making it an easy and convenient dish to prepare.

Ingredients:

  • 4 cups diced potatoes
  • 3 cups cauliflower florets
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup coconut milk
  • Chopped fresh parsley for garnish

Instructions:

In a slow cooker, combine diced potatoes, cauliflower florets, chopped onion, minced garlic, vegetable broth, water, dried thyme, dried rosemary, salt, and pepper

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes and cauliflower are tender

Using an immersion blender, blend the soup until smooth

Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the slow cooker

Stir in coconut milk and adjust seasoning if needed

Cover and cook for an additional 30 minutes on low

Serve hot, garnished with chopped fresh parsley

Classic Black Bean Soup



A hearty and flavorful black bean soup with a perfect balance of spices, perfect for a cozy meal.

Ingredients:

  • 1 cup dried black beans, soaked overnight
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Cilantro and lime wedges for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Add onion, garlic, bell pepper, and jalapeno pepper

Saut until softened

Add soaked black beans, vegetable broth, cumin, chili powder, bay leaf, salt, and pepper

Bring to a boil, then reduce heat and simmer for 1-1

5 hours or until beans are tender

Remove bay leaf and discard

Using an immersion blender, blend soup until smooth or blend in batches in a regular blender

Adjust seasoning if needed

Serve hot, garnished with cilantro and lime wedges

Classic Waffles



Enjoy the simple pleasure of homemade waffles with this classic waffle recipe. Perfect for a leisurely breakfast or brunch!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions:

Follow the directions that came with your waffle iron to get it hot

Whisk the flour, sugar, baking powder, and salt together in a large bowl

Put the eggs in a different bowl and beat them

Then add the milk, oil, and vanilla extract

Combine well

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Don't mix it too much; a few lumps are fine

If you need to, lightly grease the waffle iron with cooking spray or oil

Put the right amount of batter on the waffle iron that has already been heated up and then close the lid

Follow the directions on your waffle iron to cook the waffles until they are golden brown and crisp

This should take about 4 to 5 minutes

With care, take the waffles out of the pan and serve them warm with syrup, fresh berries, or whipped cream

Crockpot Spaghetti and Meatballs

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs

  • 1 egg, beaten
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

  • 24 oz jar marinara sauce
