Easy Vegan Potato Gnocchi



This simple vegan potato gnocchi recipe makes soft, pillowy dumplings that are great for a cozy meal. These gnocchi are versatile and tasty. They are made with just a few simple ingredients.

Ingredients:

  • 3 large potatoes, boiled and mashed
  • 1 cup all-purpose flour
  • Salt, to taste

Instructions:

Mix the flour and mashed potatoes together in a large bowl

Feel free to add salt

Use your hands to work the dough into a smooth surface

Break the dough up into smaller pieces, and then roll each piece into a long rope that is about an inch wide

To make the gnocchi, cut the ropes into small pieces

If you want, you can use a fork to gently press each gnocchi to make ridges

Heat up some salty water in a pot

When the gnocchi float to the top, which means they're done, take them out of the pot with a slotted spoon

Toppings or sauce of your choice should be served hot
