Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 tablespoon instant coffee granules
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions:
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Dissolve the instant coffee granules in the vanilla extract and add it to the butter-sugar mixture
Mix well
In a separate bowl, whisk together the all-purpose flour and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a crumbly dough forms
Fold in the mini chocolate chips, distributing them evenly throughout the dough
Turn the dough out onto a lightly floured surface and knead it gently until it comes together
Shape the dough into a log about 2 inches in diameter
Wrap the log in plastic wrap and refrigerate for at least 1 hour
Preheat the oven to 325F 160C and line a baking sheet with parchment paper
Slice the chilled dough log into rounds about 1/4 inch thick and place them on the prepared baking sheet
Bake in the preheated oven for about 12-15 minutes, or until the edges of the cookies are lightly golden
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, the chocolate chip coffee shortbread cookies are ready to enjoy!
