Ingredients:
- 4 boneless, skinless chicken breasts
- 2 large tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese optional
Instructions:
Preheat grill to medium-high heat
In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper
Mix well to make bruschetta topping
Slice a pocket into each chicken breast, being careful not to cut all the way through
Stuff each chicken breast with the bruschetta topping
Grill chicken breasts for 6-8 minutes per side, or until cooked through and juices run clear
If desired, sprinkle shredded mozzarella cheese over the chicken breasts during the last few minutes of grilling, allowing it to melt
Remove chicken from grill and let rest for a few minutes before serving
Serve hot and enjoy!
